Pre heat oven to 375 degrees. in a 9" cake pans, pour the ½ cup of melted butter, use
some to lightly oil the sides of the pan. Sprinkle in the brown sugar in a uniform
layer. Drain the pineapple slices well. Arrange Pineapple on the bottom of the pan.
Put the cherry in the Pineapple centers. Set pan aside and make the batter.
Whip egg whites untill stiff and set aside. Whip yolk, and gradually add the sugar
and beat until mixture is light and fluffy. Stir in the pineapple juice and mix
well. Add flour and baking powder and stir until just mixed. Gently fold in egg
whites. Turn batter into prepared pan and smooth top. Bake 30 minutes. Loosen edge
with sharp knife and carefully flip it over with cake board There will be some liquid,
and it will be very hot. Remove cake pan. Garnish with marachino cherrie halves
for color.
